Banana Chocolate Cake







Ingredients
(a)
chocolate emulco 1 tbps
cocoa powder 30g
hot water 70g
(b)
flour 120g
baking powder 3g
sodium bicarbonate 3g
caster sugar 70g
salt 1/4tsp
(c )
cooking oil 40g
egg yolks 4
fresh milk 30g
(d)
egg whites 4
caster sugar 100g
cream of tartar 1/4tsp
ganache
whipping cream 210 g
dark chocolate 150g
butter 30g
decoration
whipping cream 200g
bananas
cocoa powder 30g
warm water 60g
Methods
Chocolate Sponge
(1) Combine ingredients (a) and put it aside.
(2) mix well ingredients (b) and add in ingredients (c) to form smooth batter.
(3) Add ingredients(a) on step (1) into the batter on step (2) to form a chocolate batter.
(4) beat ingredients (d) until stiff peaks form.
(5) Gradually fold in 1/2 of egg white form on step(4) into the chocolat batter until it well combined. Add in the rest of egg white and gently mix well.
(6) Pour the batter into a 9" cake tin. Bake it at 180c for 30-35 minutes.
Ganach
(1) Double boil whipping cream.
(2) Add in butter and dark chocolate , stir until well dissolved. Let it cool.
Chocolate Fresh Cream
(1) Whisk whipping cream till creaming, dissolve cocoa powder in warm water, add into the whisked whipping cream.
Ganish
(1) Cut the cake into 3 layers.
(2) Place one layer of cake as base, spread chocolate fresh cream evenly, arrange banana slices on top.
(3) Place second layer of cake, repeat the process (2).
(4) Cover the side and top with chocolate cream. Put it into the freezer for 15 minutes.
(5) Coat the top layer with warm ganache.
