Carrot Cheese Cake





Ingredient:(A)
Carrot Cake
4 eggs
250 brown sugar
1 tsp ovalette
Ingredient:(B)
300g plain flour
1/2 tsp ground cinnamon powder
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
Ingredient:(C)
300g carrots(grated into shreds)
100g chopped walnuts
60g raisins
Ingredient:(D)
150g corn oil
Cheese Cream:(mix till smooth and keep in the refrigerator until needed)
200g cream cheese
40g butter
40g icing sugar
1 tbsp lemon juice
Methods
  1. Place ingredient (A) into a mixing bowl. Beat till light and fluffy.
  2. Add in ingredient(B) and mix well.
  3. Add in ingredient(C) and mix well.
  4. Add in ingredient(D) and mix well.
  5. Pour batter in a 9" x 9" cake tin and bake at 130c for 40-45 minutes till done.
  6. Invert baked cake on a wire rack.
  7. Cool completely before spreading cake with the chilled cheese cream.
