Butter Layered Cake





This kek lapis is made with 12 egg yolks.It is more healthier version of kek lapis recipe that i adapted from the baking book 'Fruity Cakes' by Alex Goh. i also got other two recipes for making kek lapis but its required to use 20 egg yolks. It is not good for our health especially for those who have high cholesterol. As this is my first attempt to make kek lapis, the final result is not so bad except that it tastes a bit sweet.
ingredients
(a)
450g butter
150g sugar
2 tsps mixed spice
(b)
12 egg yolks
(c)
1 tsp vanilla essense
(d)
200g plain flour
50g cornflour
(e)
6 egg whites
160g sugar
method
  1. Grease and line bottom of an 8" square mould.
  2. cream(a) until light. Add (b) and cream until smooth and fluffy.
  3. add (c) and cream until well blended. Sieve in (D) and mix well.
  4. whip (e) untill stiff. Stir it into the batter from step (3) and mix well.
  5. spoon 120g of the batter into the an 8" square mould and spread it evenly. Place the mould on the middle track of the oven. Bake at 200c until golden brown.
  6. Remove it from the oven. Use forck to prick some holes on the cake. Pour another 120g of batter over the baked layer and spread it evenly. Bake until browned. Repeat this process until all the mixture is used up.
  7. remove the cake from the mould and set aside to cool.
