Recently, my students approached me to make some cakes for them to raise funds in order to buy their taekwondo equipment. I agreed to help them. All together i had made 12 cakes for them. 4 chocolate cheesecakes, 3 black forest cakes, 2 greentea cheesecake sand 3 blueberry cheesecakes. I'm so glad that i can take this opportunity to try the recipes of black forest cakes and greentea cheesecake.
Chocolate Sponge Cake (8")

4 egg yolks
20g sugar
(b)
4 egg whites
(c)
100g sugar
(d)
95g flour
15g cocoa powder
(e)
70g melted butter(hot)
Method
1) Whip (a) till light and fluffy.
2) whip (b) till soft peaks form and then add (c) few times and continue whipping untill stiff.
3) Mix (a) and (b).
4) Sieve in (d) and mix well.
5) Fold in (e) and mix well.
6) Bake at 190c for 15 minutes. remove the cake from the pan immediately when done.
Chocolate cream(ingredient for 9")
250g whiped cream
60g dark chocolate buttons, melted
30g milk
150g whipped cream(decoration)
pitted cheery filling or
825g canned cherries
some chocolate shavings(decoration)
Apricot syrup
apricot jam
4 tbps warm water
method
1) Cut the chocolate sponge cake into 3 layers(i'm only cut it into 2 layer).
2) To make chocolate cream:Mix the chocolate with milk until well blended. add it into the whipped cream(250g).
3) Brush the first layer of cake with apricot syrup. Spread some chocolate cream on top of the cake and place some cherry over the chocolate cream.
4) Put second layer of cake on top and repeat step 3.
5) Top with 3rd layer of cake. Brush the cake with apricot syrup.
6) Spread the whipped cream(150g) over top and sides.
7) coat the sides of the cake with chocolate curls and place some of them in the centre.
8)Decorate the cake with fresh cream and pitted cherry.
