Mixed Fruits Mousse Cake




Just feel like to practice my cake decoration skill with fresh cream, so i made this birthday cake. I decided to put the cake overnight in the refrigerator and will taste it tommorow.
Ingredients:
Cake
(a)
4 egg yolks
20g sugar
1/4 tsp vanilla essence
(b)
4 egg whites
(c)
100 sugar
(d)
110g flour
(e)
70g melted butter
method
1. whip (a) until light and fluffy.
2. whip (b) until soft peaks form. Add(c) and continue whipping until stiff.
3. Fold the meringue into (a) untill well blended
4. Sieve in (d) and fold until well combined.
5. Fold in(e) and mix well .
6. Pour batter into 8" ring
7. bake at 190c for 15 minutes.
8. Remove the cake from the pan immediately when done.
Filling
(a)
150g Mango puree
30g sugar
(b)
1 tbsp Gelatine powder
50g water
(c)
160g whipping cream
(d)
150g whip topping cream, whipped
100g Apricot gel
40g water
Method
1. whip (c) until soft peaks form. Cut the cake into 2 slices.
2. Cook (a) until it boils.
3. Mix (b) and cook over double boiler until gelatine dissolves. Add the solution into (a) and mix well.
4. Cool in ice water bath until the mixture at room temperature. Add (c) immediately and mix well.
5. Place 1 layer of cake at the bottom of the 8" ring. Then pour half the filling from step (4) onto it and level the surface. Add some fruits on top of filling(i used mango).
6. Top with the second layer of cake and pour the remaining filling onto it and level the surface. Refrigerate until firm.
7.Remove the ring and spread a thin layer of whipped topping cream on top. Arrange fruits slices(mango, kiwi, strawberry, dragon fruit or any fruit that you like) on top.
8. Mix (d) and cook over double boiler until melted. Glaze them with apricot gel.
