Custard Shanghai Mooncakes


i got this recipe from the lady boss at Venturi. The filling that i used to make this mooncake is green tea lotus paste. It tastes good according to my colleagues. I also received an order from my colleague to make this mooncake for her.
ingredients for skin
(A)
icing sugar 50g
butter 250g
(B)
egg 1
ammonia bicarbonate 1/2 tsp
(C)
hong kong flour 375g
custard powder 50g
baking powder 1 1/2 tsps
For Filling
green tea lotus paste 1kg
melon seeds(roasted) 100g
Methods:
1) Mix ingredient A until light and fluffy.
2) Add in ingredient B and mix well.
3) Add in ingredient C and mix well.
4) Proof dough for 20 minutes.
5) Divide the skin into portions of 36g each and filling 50g each.
6) Flatten the skin, wrap in filling. Shape round. Glaze surfaces and top on melon seeds.
7) Bake in a preheated oven at 180c for 15-20 minutes till golden.
Note:
If you like to eat salted egg yolks, use 40g green tea lotus paste as filling.
