Sacher-Torte


This is a birthday cake specially made for my god sister, Evi. It took me the whole Firday night to get this Sacher-Torte done. Firstly, i have to bake the chocolate cake and wait for it to cool down before i can slice the cake into 2 pieces. Meanwhile, i need to prepare the chocolate coating and chocolate mousse. After that, i spread chocolate mouse on top of 1st layer of the cake and then pour the chocolate coating on top of the cake. Done!!
The decoration for this cake is a bit ugly but the taste is pretty good. Again, thanks to Anita & Sanny @ Jam Bakery cookbook. It is worth to buy this cookbook.
Ingredients(6" cake ring)
Chocolate cake
90g egg white
75g granulated sugar(organic brown sugar)
60g egg yolk
15g granulated sugar(organic brown sugar)
64g dark chocolate buttons
Filling
30g Apricot Jam
Chocolate Coating
100g Dark Chocolate Buttons
64g Melted Unsalted Butter
90g Whipping Cream
To Decorate
30g Dark Chocolate Buttons
Methods
  1. Whisk egg white at medium speed until foamy, then add in granulated sugar(75g) gradually and whisk until soft peak form.
  2. Whisk unsalted butter at medium speed until smooth, then add in granulated sugar(15g) gradually and whisk well.
  3. Add in beaten egg and whisk well at low speed.
  4. melt dark chocolate buttons by setting over a bowl of simmering water.
  5. Put the melted chocolate into the mixture and fold well.
  6. Add in 1/3 of (1). Sift in plain flour. Then pour the rest of the(1) and fold well.
  7. Pour mixture into the cake ring and bake for 40 minutes at 180c.

Hi Mimi,

Oh your birthday cake look beautiful! I would recommend you to decorate your cake with different color of cream especially your wording - white color is better. Hope you can have a another cake post on your blog soon.
